The clock face is the clue. Starting from a given moment, the time ○ Minutes After and ○ Minutes Before is read by running the long hand forward or back. Nothing has to be written as an expression; the whole lesson rests on looking at a drawn clock.

The numerals 1 to 12 stand for blocks of five minutes, so the numeral pointed at is multiplied by five to give the minutes. In both directions the hand passes twelve and the hour is bound to change, which makes it easy to leave the hour numeral as it was. An answer whose hour matches the hour drawn in the figure has skipped that move.
Stopwatches and Seconds still has the face being read, and what changes is the unit taken off it, minutes giving way to the finer seconds. The habit of pulling a figure out of a drawn clock is formed here.
