Eleven never appears on the face of the tables. Seen as a group of ten with a one beside it, the ten part and the one part are multiplied separately and the two results added. Calculation is repeated with Fill in the Blank in between, until equations with large multipliers come within reach.

After the split into a ten part and a one part, the wrong figure gets added at the end: the 1 from the ones of eleven rather than the multiplier. What is added is always the multiplier itself, so taking the answer of The 10 Times Table away from the product settles it.
What has changed is not the multiplier but the number being multiplied, now eleven. To the movement of the tens grasped in The 10 Times Table is added one further step, adding the one part on.
